Aubergine Curry

This is my take on a Gujarati dish Oro. If you have never tried aubergines before, this is the dish for you! Aubergines are an excellent source of dietary fibre, they are also a good source of vitamins B1 and B6 and potassium and high in the minerals copper, magnesium and manganese. Putting all the health benefits aside its a super taste dish, quick and easy to make, give it ago!

Ingredients

  • 1 medium Green capsicum
  • 2 medium Green Chillies
  • 1 handful Coriander
  • 2 medium aubergines
  • 1 tbsp olive oil
  • 1 1/2 tsp Jeera
  • 20 g Green peas
  • 1 tsp Salt add to taste
  • 1 tsp Turmeric
  • 1/2 tsp red chilli powder
  • 1 1/2 tsp cumin and coriander powder
  • 2 medium Tomato
  • 1 medium Lemon

Instructions

  1. Chop green capsicums into small cubes
  2. Chop green chillies and coriander finely
  3. Wash and dry aubergine and make little holes in them using a fork.
  4. Put them in the oven for 10 minutes gas mark 6 till the aubergine is soft and cooked. If you have a gas as I do you can do this on the gas hub as well.
  5. Wait till its slightly cooled and then peal the skins. Then chop off the tops and roughly chop the flesh of the aubergine
  6. In a pan add 1 tbs olive oil and warm up medium heat
  7. Add Jira seeds and wait till they start popping
  8. Add green chillies and mix
  9. Add green capsicum cubes and peas
  10. Add Salt, turmeric, red chilly power and cumin and coriander powder
  11. Add aubergines and cook for 5 minutes on medium heat
  12. Add fresh chopped tomatoes cook for a further 5 minutes.
  13. Add coriander
  14. Add lemon juice
  15. Serve with some bread or rice
