Cauliflower Pea Curry

This is a super simple curry that you can make with very simple ingriedients. Cauliflower has an impressive array of nutrients, including vitamins, minerals, antioxidants, and other phytochemicals. I make this atleast once a week its one of the best meals to have after a good work out at the gym, IMHO. Give it a go and let me know what you think.

Ingredients

  • 1 medium Cauliflower Chopped finely
  • 1 cup Peas
  • 5 medium Tomatoes
  • 1 tbsp Sunflower Oil
  • 1 tsp Black Mustard Seeds
  • 1 tsp Cumin Seeds
  • 1 medium Green Chilli Chopped finely
  • 1 cm cube Fresh ginger Chopped finely
  • 1 tsp Turmeric
  • 1/2 tsp Chilli powder optional if you like it extra hot
  • 2 tsp cumin and coriander powder
  • 1/4 tsp Garam Masala
  • 1 tsp Salt
  • 1 Bunch Coriander
  • 1/2 Medium Lemon

Instructions

  1. Cut cauliflower finely and put to oneside.
  2. Grind 4 tomatoes and corriander in a blender.
  3. In a pan add 1 tbsp of sunflower oil and heat on medium heat.
  4. Add black mustard seeds when the oil is hot until they start to pop.
  5. Add cumin seeds and stir, reduce the heat to low.
  6. Add chopped green chillies and chopped ginger and stir.
  7. Add 1 tsp tumeric.
  8. Add 1/4 tsp garam masala.
  9. Add 2 tsp of cumin and corriander powder.
  10. Add 1/4 tsp chilli powder.
  11. 1 tsp of salt (add to taste).
  12. Add cauliflower and peas to the spices and mix through.
  13. Add the tomatoe paste and 1/2 cup of water.
  14. Cook on medium heat for 20 minutes.
  15. Squeeze 1/2 lemon.
  16. Add corriander to Garnish and then serve.
