These bad boys are an adaptation of the humble potato croquette. I decided to add a twist making them vegan and gluten free!, warning they are deliciously moreish and highly addictive. Great for  starters or just finger food when you have friends around. Try with different fillings and do let me know what you think…

Ingredients

  • 4 medium Potato
  • 4 tbsp Potato starch
  • 4 tsp Coconut butter use normal butter if you are not vegan
  • 1/2 tsp Black pepper
  • 1/2 tsp Cayenne pepper
  • 1 tsp Dry basil
  • 2 medium Green Chillies finely chopped (optional)
  • 1 tsp Salt add more if to taste
  • 100 g Violife cheese use normal cheese if you are not vegan
  • 100 mils Sunflower Oil enough to deep fry the croquettes

Instructions

  1. Wash and remove the skin of the potatoes and bake them in the microwave for 15 minute (until they are cooked)
  2. Mash the potatoes in a bowl and add 4 tbsp potato starch 4 tsp Coconut butter 1 tsp salt 1/2 tsp black pepper 1/2 tsp cayenne pepper 1 tsp dry basil 2 green chillies (finely chopped) mix through till firm doughy consistency. If its loose add more starch.
  3. Make 8 balls out of the mixture and flatten them down into 1/2 cm thick discs.
  4. Cut the violife cheese into 8 small strips (4cm by 2 cm) Add the cheese into the middle of the disk and fold up the disc and make into a cylinder.
  5. Fry croquettes in sunflower oil till golden brown. For the health conscious Bake the croquettes in an oven with olive oil till golden brown gas mark 5 (30-45 minutes).
