These are my quick and easy recipe for potato skins. Its so easy that even if you can only cook a pot noodle you will be able to make this. Feel free to experiment with the potato mixture, add different vegetables and make it your own.

Ingredients

  • 4 medium Potatoes
  • 4 tbsp olive oil
  • 50 grams Vegan cheese
  • 1/2 medium Green capsicum
  • 2 medium Green Chillies optional
  • 1 tsp Salt
  • 2 tsp Black pepper
  • 1/2 tsp Cayenne pepper

Instructions

  1. Wash and cook potatoes in a microwave for 10-15 minutes
  2. Cut capsicum and chillies
  3. Cut potatoes in half and spoon out the inside of the potatoes into a bowl
  4. Brush the skins with olive oil and cook in a preheated oven for 10 minutes.
  5. Mash the potato and add salt, pepper and cayenne pepper add the remaining olive oil.
  6. Once the skins are crispy take them out of the oven
  7. Add the mixture back into the skins
  8. Top with grated vegan cheese and cook in the oven for another 10 minutes
  9. Serve with chilli or tomato sauce and a simple salad (avocado, cucumber, tomato, green peppers, salt,pepper and lemon juice)
