Spicy Rice

This is my tried and trusted spicy rice. Its quick and simple to make. It might be something genetic from my Indian heritage, I really hate wasting food so  I usually make this when I have left over rice, I am hungry and confused and want something substantial that packs a punch. You can add more vegetables such as peas, sweetcorn and mushrooms. Give it a go make it your own and send me snaps of how yours turns out.

Ingredients

  • 100 g Rice
  • 1 tbsp olive oil
  • 1 tsp Cumin Seeds
  • 2 cm square Fresh ginger
  • 1 medium Green Chillies
  • 1/4 small white cabbage
  • 1/4 medium Red capsicum
  • 1 Small Carrot
  • 1 handful Baby spinach
  • 1/2 tsp Salt
  • 1 tsp Turmeric
  • 1 handful Coriander

Instructions

  1. Wash rice a few times draining away the water each time.
  2. Cook rice for 10 minutes in a saucepan of water till cooked. Drain the water and wash the rice in cold water to ensure they stay separate.
  3. Wash and chop the vegetables including the spinach
  4. In a pan add the Olive oil and warm
  5. Add 1 tsp cumin seeds Fresh ginger Chillies to the pan and stir till the ginger starts to turn brown
  6. Add the vegetables and stir for 5 minutes at medium heat.
  7. Add rice and stir Add 1/2 tsp Salt 1 tsp turmeric stir till all the rice is yellow in colour
  8. Turn off the heat and add the chopped coriander. Serve and enjoy
