Ingredients

  • 1 medium Aubergine
  • 2 tbs Sunflower Oil
  • 1 tsp Black Mustard Seeds
  • 1 tsp Jira seeds
  • 2 medium Green Chillies
  • 2 cm cube Ginger
  • 1/2 tsp Salt To taste
  • 1/2 tsp Turmeric
  • 1/2 tsp red chilli powder
  • 1 1/2 tsp Jira and coriander powder
  • 1/4 tsp Garam Masala
  • 4 medium Tomatoes
  • 1 medium Lemon
  • 1 bunch Coriander

Instructions

  1. Wash abuergine and dry with kitchen role. With a sharp knife chop the abuergine into small equal sized cubes.
  2. In a non stick pan add 2 tbs of sunflower oil and heat.
  3. On medium heat add 1tsp mustard seeds and jira seeds. Till they start to pop.
  4. Peel ginger and both ginger and green chillies finely and add to the pan.
  5. Add chopped abuergines and stir fry for 5 minutes till it is covered with oil.
  6. Add 1tps salt, 1/2 tps tumeric, 1/2 red chilli powder, 1 1/2 tsp Jira and coriander powder and 1/4 garam masala.
  7. Grind 4 tomatoes in a blender and add to the vegetables.
  8. Add the lid and cook for 25 minutes till abuergine is soft enough you can break them with a spoon.
  9. Add the juice of 1/2 lemon and garnish with corriander.
