Baby Corn Hara Masala

I had about 6 moths without a kitchen this year while it was being renovated. I made do with a camp stove and a microwave. Where there is constraints I ended up trying new things just in the microwave. This one was originally from Tarla Dalal one of Indians best chiefs. I have altered the recipe to make it my own and invite you to do the same. Baby corn is veg that I must admit when I buy I only think stir fry and noodles. This one is a favourite for movie night spicy snack that can be eaten as a meal or just on its own while watching something on Netflix or Disney plus!

Ingredients

  • 2 cup baby corn, cut lnto 4 lengthwise
  • 1 tsp lemon juice
  • 1 tsp sugar
  • 2 tbsp sunflower oil
  • 1/2 tsp salt
  • 1 cup chopped coriander
  • 12mm pealed ginger
  • 2 green chillies (use less if you don't like the spice)
  • 1 tsp cumin
  • 1 medium tomato sliced

Instructions

  1. In a pestle and mortor make a paste of chillies, ginger coriander
  2. Add to a bowl add oil and cumin and microwave on high for 1minute 30 on high 900w
  3. Remove ad add baby corn salt and 2 tbsp water stir well and cover with a lid and microwave on high for 7 minutes
  4. Add lemon juice and sugar and mix well
  5. Serve hot garnished with tomatoes
