Batata Vara

I had some friends around for dinner the other week and I made these for starters. I promised to put the reciepe on here for my friends as they loved them so much. This is my mums reciepe for batata vara, its a great snack dish and can be servered any time of the day with chutney, ketchup or chilli sauce. Feel free to add other ingriedients into the potato mixture to experiement let me know what you come up with.. ENJOY….

Ingredients

  • 2 Medium Baking potatoes
  • 2 cm cube Fresh ginger
  • 2 medium Green Chillies
  • 1/2 tsp Turmeric
  • 1 tsp Salt To taste
  • 1/4 tsp Garam Masala
  • 1/2 medium Lemon
  • 1 Handful Coriander
  • 1 Cup Gram flour
  • 1/4 tsp baking powder
  • 1/2 tsp red chilli powder

Instructions

  1. Bake the potatoes in a microwave till they are cooked and remove the skin.
  2. Ground the chillies and ginger and add to the potatoes.
  3. Add 1/4 tsp tumeric, 1/2 tsp salt, 1/4 tsp garam masala the juice of 1/2 a lemon to the potato mixture.
  4. Cut corriander finely put to the mixture and mix using a metal spoon till all the spices are mixed through.
  5. In another bowl to make the batter add 1 cup gram flour, 1/2 tsp salt (to taste), 1/4 tsp baking powder and 1/2 red chilli powder.
  6. Add 1/2ish cup of warm water till you have a viscous batter mix.
  7. Make the potato mixture into small balls dip in the bater.
  8. Fry in medium heat sunflower oil till crispy brown.
  9. Drain off excess oil and serve with your favourite chutney.
