Blueberry muffins

I do enjoy baking and always on the good look out for quick easy recipes to make desserts. This amazing recipe is from chef Trusha!  Moist and fluffy blueberry muffins. Yumbo!!!

Ingredients

  • 1.5 cup flour
  • 1 or 2 cups blue berries- fresh or frozen- defrosted
  • 1/4 cup vegetable oil of choice not olive
  • 1 cup non-dairy milk
  • 2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 180 degrees for 10/15 minutes
  2. Place all dry ingredients together in a large bowl
  3. Mix the wet ingredients together first and then add to the dry mix
  4. Slowly fold in the blueberries either whole or mashed if you like that colour!
  5. Bake in the oven for approximately 20 minutes.
  6. Check to make sure they are fully cooked with a toothpick
