Brussels sprouts curry

Brussels sprouts are believed to originate from the city which they get their name from Brussels, Belgium. Records trace them back to the 13th century in the Brussels area! Now there are many Anti Sprouters out there the ones that go eewww I don’t like Brussels sprouts. I was one of them Anti Sprouters till I discovered this curry. Its true what they say everything is better with curry. This is a simple recipe with a few ingredients and transforms your Brussels sprouts into something delightful.

Ingredients

  • 150g brussel sprouts (washed and chopped)
  • 2 medium carrots (washed and chopped)
  • 20g frozen peas
  • 2 tbsp of oil
  • 1/2 tsp of black mustard seeds
  • 1/2 tsp of cumin seeds
  • 1 1/2 tsp salt
  • 1/4 tsp Tumeric powder
  • 1 tsp red chilli powder
  • 2 tsp coriander, cumin powder
  • Juice of 1 medium lemon
  • 4 medium tomatos chopped
  • Handful of fresh coriander chopped

Instructions

  1. Add 2 tbsp of oil and heat
  2. Add mustard seeds till they pop
  3. Add cumin seeds
  4. Add chopped sprouts
  5. Add chopped carrots
  6. Stir well
  7. Add 1 1/2 tsp salt
  8. Add 1/4 of Tumeric powder
  9. Stir at medium heat for 5 minutes with lid on till sprouts start to get soft
  10. Add peas
  11. Add 1 tsp red chilli powder
  12. Add 2 tsp coriander, cumin powder
  13. Add juice of 1 medium lemon and stir
  14. Add chopped tomatoes
  15. Add handful of fresh coriander and stir through
  16. Cook with the lid off on low heat for a further 10-15 minutes till the curry is slightly dry
  17. Serve with flat bread or as a side for your Christmas dinner
