In my opinion this can be eaten any time of the day and yes even breakfast. I have fond childhood memories of eating sambaro at Gujarati weddings for breakfast. This recipe is simple quick moorish and comes packed full of flavour.

Ingredients

  • 1 tbsp Sunflower Oil
  • 4 small Curry leaves
  • 1 tsp Black Mustard Seeds
  • 1 tsp Jira seeds
  • 1 cm cube Ginger
  • 2 medium Green Chillies
  • 1/2 medium Cabbage
  • 2 medium Carrot
  • 1 tsp Turmeric
  • 1 tsp Salt to taste
  • 1 Handful Coriander
  • 1/2 medium Lemon

Instructions

  1. chop carrots and cabbage into thin julienne peal and chop ginger chop green chiilies
  2. Heat sunflower oil in a pan adding 4 curry leaves black mustard seeds jira seeds till they start popping
  3. Add ginger 1/2 of your chillies stir till ginger starts to go brown
  4. Add Carrots Cook for 2 minutes
  5. Add Cabbage 1 tsp turmeric 1 tsp salt Cook till soft but still with a bite usually 5-7 minutes turn off heat
  6. Add coriander lemon Stir
  7. Plate up and garnish with the remaining chillies serve with rotli (flat bread)
