This is one of them meals that is quick and easy and most of all tasty. When you have left over wraps or chapati (indian flat bread) make this delicious dish. It is an amazing meal for any time of the day the ginger and spice make it very homely and warming, the wraps makes it filling.

Ingredients

  • 1 tbsp Sunflower Oil
  • 1 tsp Cumin Seeds
  • 1 tsp Black Mustard Seeds
  • 5 small Curry leaves
  • 1 Small Chunk Ginger Pealed And finely chopped
  • 2 Fresh Green Chillies Washed and chopped
  • 1 tsp Salt
  • 1 tsp Turmeric
  • 2 tsp Fenugreek Optional
  • 3 tbsp Yogurt Greek or Natural (Use a vegan substitute if you like)
  • 1 1/2 cup Water
  • 4-6 medium Chapati you can use mexican wraps as well.

Instructions

  1. Heat 1 tbsp oil in a pan
  2. Add 1 tsp Cumin Seeds
  3. Add 1tsp Black Mustard Seeds and cook until they pop
  4. Add curry leaves
  5. Add Cut up Ginger and Chilli and cook for another 1 minute. Turn down the heat
  6. Add 1 tsp Turmeric
  7. Cut the Wraps/ Rotli into small square and put into the pan. Stir till they are crisp.
  8. Add 1 tsp Salt
  9. Add 2 tsp Fenugreek
  10. Add 1 cup water
  11. Add 3 tbsp Yogurt into a cup and add water. Add this to the wraps
  12. Turn up the heat
  13. Cook for further 5 minutes till the sauce is thick.

 

Notes

If you want to make this gluten free. Try it with gluten free wraps.
