Double Pecan Brownies

This Vegan Pecan Brownie recipe I have had since lockdown and I have been altering the recipe to get it passed the chief tasters in my house (the kids)! My recipe card has scribbles all over it similar to the Half Blood Prince book in Harry Potter. I made these this week and both kids gave me double thumbs up so its ready for you guys to try. Chocolate, nuts, rich sugar what’s not to like?

Ingredients

  • 1/2 cup Sweet potatoes puree (150g sweet potatoes, peeled boiled and mashed)
  • 1 1/2 cup about 220g gluten free flour or plain flour
  • 1 cup (120g) Cocoa
  • 3/4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup (50g) pecan or walnuts chopped
  • 1/2 cup (100g) vegan chocolate chip, or chopped up chocolate
  • 1 cup (200g) sugar
  • 1/2 cup (125ml) sunflower oil
  • 1/2 cup (125ml) maple syrup
  • 2 tsp vanilla extract
  • 2/4 cup (180 ml) soy milk it also works well with almond milk

Instructions

  1. Grease and line 20cm x 30cm tin
  2. Prepare the sweet potatoe puree and leave to cool
  3. In a bowl sift the flour, cocoa, baking powder and salt and stir through the nuts, chocolate chip and sugar.
  4. In another bowl add the wet ingredients syrup, vanilla extract, soy milk and sweet potato puree and whisk together
  5. Add the wet ingredients to the dry and stir well (The batter should be moist enough to pour into the tin, if its too stiff add more soy milk
  6. Pour batter into tin and bake for 30-40 minutes Gas mark 3, 170 degrees. you will know its soon when you get a springy top you want the inside to stay slightly moist
  7. Serve with some vegan ice cream or fresh fruit its delicious

Notes

Remember to keep the inside moist or it can become very dry. If you swing it in the microwave for 30 minutes the next day and serve with ice cream the hot goey centre with the cold ice cream is delicious! Also try dribbling caramel over the top to give it that extra richness
