These are my fail proof roast potatoes. They are guaranteed to be crispy on the outside and fluffy on the inside! Roast potatoes are the main thing about Christmas dinner and left overs are also delicious.

Ingredients

  • 8-10 small maris piper potatoes
  • 4 tbsp of olive oil
  • 1 tbsp vegan. butter (optional)
  • Handfull of Thyme
  • Sea salt to taste
  • Crush black pepper

Instructions

  1. Peal potatoes and wash in cold water
  2. Boil potatoes in boiling salt water for 10 minutes to make sure you don't over cook it
  3. Take potatoes out of water and hit them with a wooden spoon just enough to make them a little fluffy around the edges this will make the more crispy
  4. In a baking tray add vegan butter and olive oil
  5. Add potatoes and mix so they oil coats the potatoes
  6. Add salt and pepper and mix again
  7. Pre heat a oven to 200 degrees
  8. Add baking train into the oven and cook for 20 minutes
  9. Take out the tray and mist the potatoes flipping them over so you get even crisp
  10. Again given each potato a gentle hit with a spoon to make them a bit more fluffy
  11. Add thyme and mix
  12. Put back into oven for another 20 minutes till you have golden crispy potatoes!
