Tofu Vegetables

Ingredients

  • 1 tbsp sunflower oil
  • Chopped mushrooms, red pepper, beansprouts, baby corn, broccoli
  • Dark soy sauce
  • 200g Tofu
  • Sauce
  • 2 chopped fresh chilli
  • 3 tbsp peanut butter
  • 1/2 cup coconut milk
  • 1/2 half can tin chopped tomatoes
  • 1 tbsp dark soy sauce
  • 1tbsp honey and reduce

Instructions

In a pan add chopped fresh chillies, peanut butter, coconut milk chopped tomatoes, dark soy sauce,  honey and reduce on a medium heat for 5 minutes till you have a thick sauce.

In a wok on high heat add oil

Slap in the veggies (mushrooms, red pepper, beansprouts, baby corn)

Add a few dashes of dark soy sauce

Chop and Fry off the tofu in a separate pan for 5 mins Add the sauce and mix well 

Dish up the veggies and pour the tofu on top.
