Vegan Burger

Ready made Vegetarian burgers can be full of salt and oil. This is my quick burger recipe, I make these in the bulk so I can use them from the freezer whenever I need to fill a hole. To prevent the burger falling apart its best to make them and put them in the fridge for a few hours so they keep their shape when you make them. If you are gluten free I suggest using these  in lettuces and try it as a naked burger!

Ingredients

  • 1 cup of peas
  • 1 cup of sweetcorn
  • 3 carrots
  • 1 red pepper
  • 1 yellow pepper
  • 4 large potatoes
  • 1 tsp salt (to taste)
  • 1 tsp black pepper
  • 1 tsp mustard
  • 1 tsp BBQ sauce
  • 1 tsp paprika
  • 4 tbsp sunflower oil

Instructions

  1. Peal and boil potatoes
  2. Cut into small squares, 3 carrots. 1 red pepper, 1 yellow pepper
  3. Fry off vegetables with 2 tbsp sunflower for 5 minutes
  4. In a bowl mash potatoes
  5. Add fried veg to potatoes and mix
  6. Add  1 tsp salt (to taste)
  7. Add 1 tsp black pepper
  8. Add 1 tsp mustard
  9. Add 1 tsp BBQ sauce
  10. Add 1 tsp paprika
  11. Mixx till it all is bound together you are looking for a firm mixture here and make as many burger shapes
  12. Shallow fry the burgers (or oven cook them) till they are brown
  13. Put burgers in the fridge to make sure they keep their shape.
  14. When you want to make your burger heat in oven or micro wave.
  15. You can make the burger however you want I tend to use lettuce, tomato, cucumber vegan mayo, chilli sauce and ketchup on a toasted bread!

Notes

If the mixture is too soft add more potatoes if its too hard add very little water.
