This is a new recipe my amazing mother showed me this weekend. She was in town so we did a massive cook out. Dokla is a Gujarati dish it is healthy and packed full of iron, amazing any time of the day breakfast, lunch, dinner or a sneaky supper.
Ingredients
- 1 bag Baby spinach
- 150 grams chickpea flour
- 1 tsp baking powder
- 1 1/2 tsp Salt Add to taste
- 1 tsp Turmeric
- 3 medium Green Chillies
- 2 cm cube Fresh ginger
- 4 tbsp Dried fenugreek leaves
- 4 tbsp Yogurt
- 1 medium Lemon
Instructions
- Wash and dry spinach and then chop into thin strips. Chop chillies and ginger finely And add to a bowl
- Add 150g chickpea flour and mix till all the spinach is covered by the flour
- Add to the bowl 1 tsp baking powder 1 1/2 tsp salt (to taste) 1 1/2 tsp turmeric 4 tbsp dried fenugreek leaves 4 tbsp yogurt (Free from natural yogurt works really well) Squeeze 1 medium lemon
- Mix till you have a sticky dough. If its too try add some water if too wet add more chickpea flour.
- Put mixture into a sandwich tin You need to steam the mixture there are Dokla steamers out there but if you do not have one of them in a large saucepan add boiling water and then put a sandwich tin upside down. Then put the sandwich tin with the mixture on top. You have to make sure the water does not get into the mixture.
- Cook for 20 minutes till you can put a sharp knife into the mixture and nothing sicks to the knife.
- Remove and chop up the Dokla. Serve with chilli sauce
