Vegan Burgers

Having a good burger recipe is always a must! Especially with young hungry mouths where you want to avoid high salts and not so healthy fillers you can fry them or just put them in the oven on high heat. I usually make a large batch part cook them and throw them in the fridge for later use.

Ingredients

  • Vegan Mince
  • 2 medium potatoes (pealed and mashed)
  • 5 mushrooms (Optional)
  • handful of fresh coriander
  • 2 tbs of olive oil
  • 1tsp coriander powder
  • 1tsp salt
  • 1tsp black pepper
  • 2tsp dry parsley
  • 1tsp mild red chilli powder
  • Juice of 1 lemon

Instructions

  1. Boil and peal potatoes and mash them
  2. Add vegan mince
  3. Add chopped mushrooms (Optional)
  4. Add coriander powder
  5. Add Salt
  6. Add black pepper
  7. Add parsley
  8. Add chilli powder
  9. Add chopped fresh coriander
  10. mix well with hands and add olive oil
  11. Make into round burgers with wet hands and put in the fridge to cool (this will help it keep its shape)
  12. Over cook at 200 degrees for 25minutes or shallow fry till golden brown
  13. Service stacked in a bun with vegan mayo, chilli jam, rocket, cucumber and tomatoes

 

Notes

You can add as much veg as you want into the burger however be careful to remove all excess water before you cook or the burgers will not keep their shape.
