These are my quick and easy recipe for potato skins. Its so easy that even if you can only cook a pot noodle you will be able to make this. Feel free to experiment with the potato mixture, add different vegetables and make it your own.
Ingredients
- 4 medium Potatoes
- 4 tbsp olive oil
- 50 grams Vegan cheese
- 1/2 medium Green capsicum
- 2 medium Green Chillies optional
- 1 tsp Salt
- 2 tsp Black pepper
- 1/2 tsp Cayenne pepper
Instructions
- Wash and cook potatoes in a microwave for 10-15 minutes
- Cut capsicum and chillies
- Cut potatoes in half and spoon out the inside of the potatoes into a bowl
- Brush the skins with olive oil and cook in a preheated oven for 10 minutes.
- Mash the potato and add salt, pepper and cayenne pepper add the remaining olive oil.
- Once the skins are crispy take them out of the oven
- Add the mixture back into the skins
- Top with grated vegan cheese and cook in the oven for another 10 minutes
- Serve with chilli or tomato sauce and a simple salad (avocado, cucumber, tomato, green peppers, salt,pepper and lemon juice)
