Dabeli also known as double roti is a famous Mumbai roadside food and Gujarat street food. Dabeli originates from Kutch, Gujarat and if you have friends from Kutch I am sure you have had this tasty treat. This is my take on dabeli instead of putting the mixture in-between the bread and then cooking it on a hotplate with butter. you make fresh bread dough and cook it with the mixture inside it. Tangy, spicy and lip smacking yummy – Dabeli ! This popular Indian street food is simply the BEST. And it’s very easy to make at home. The mixture is made from potatoes spices and peanuts however you can really put what ever you fancy within the mixture. I have also made this with pizza topping for the kids! Ingredients

  • Bread
  • 500g strong white flour, plus extra for dusting
  • 7g sachets dried yeast
  • 2 teaspoons caster sugar
  • 2 tsp salt
  • 300ml (1 cup) warm water
  • 3 tbsp olive oil
  • Dabeli Mixture
  • 5 medium potatoes
  • Dabeli Masala 
  • 4 tbsp crushed roasted peanuts
  • 2 tbsp Dabeli Masala
  • Juice of half a lemon
  • Handful off chopped coriander 
  • Chilli sauce
  • Tamarind sauce
  • Nylon sev 

Instructions

Bread

  1. Mix 500g strong white flour, 2 tsp salt and a 7g sachet of yeast into a bowl\
  2. Make a well in the centre, then add 3 tbsp olive oil and 300ml water, and mix well. If the dough seems a little stiff, add another 1-2 tbsp water and mix well.
  3. Tip onto a lightly floured work surface and knead for around 10 mins.
  4. Once the dough is satin-smooth, place it in a lightly oiled bowl and cover with cling film. Leave to rise for 1 hour until doubled in size

Dabeli Masala

  1. Boil the potatoes. Remove the skin and mash the potatoes
  2. In a hot pan add oil and crushed roasted peanuts
  3. Add your 2 tbs Dabeli Masala and stir (you can buy ready made dabeli masala from all good Indian shops, see notes on how to make it at home)
  4. Add your mashed potatoes into the pan
  5. Add juice from half a lemon
  6. Add chopped coriander
  7. Let it rest and cool for 30 minutes

Dabeli Loaf

  1. Take a handful of dough and roll it out into a circle
  2. Put the dabeli mixture in between
  3. Pinch the dough and make it into a bread ball again
  4. Make as many of these as you can with the dough and mixture
  5. Heat oven to 220C/fan 200C/gas
  6. Place the Dabeli loafs into the oven
  7. Bake for 25-30 mins until the dabeli role is golden brown
  8. Cut in half and pour in some chilli sauce and tamarind sauce and sprinkle over some nylon sev

Notes

Home-made Dabeli masala powder is made of dried red-chilies, black-pepper powder, dried coconut, salt, clove, cinnamon, coriander, cumin, turmeric, green cardamom, Badiyan, black-salt, Tej Patta or bay leaf and other garam masalas. Everything is dry roasted and then ground into a fine powder. The Dabeli masala powder stores well for 6 to 12 months in an airtight jar.
