This is a super simple curry that you can make with very simple ingriedients. Cauliflower has an impressive array of nutrients, including vitamins, minerals, antioxidants, and other phytochemicals. I make this atleast once a week its one of the best meals to have after a good work out at the gym, IMHO. Give it a go and let me know what you think.
Ingredients
- 1 medium Cauliflower Chopped finely
- 1 cup Peas
- 5 medium Tomatoes
- 1 tbsp Sunflower Oil
- 1 tsp Black Mustard Seeds
- 1 tsp Cumin Seeds
- 1 medium Green Chilli Chopped finely
- 1 cm cube Fresh ginger Chopped finely
- 1 tsp Turmeric
- 1/2 tsp Chilli powder optional if you like it extra hot
- 2 tsp cumin and coriander powder
- 1/4 tsp Garam Masala
- 1 tsp Salt
- 1 Bunch Coriander
- 1/2 Medium Lemon
Instructions
- Cut cauliflower finely and put to oneside.
- Grind 4 tomatoes and corriander in a blender.
- In a pan add 1 tbsp of sunflower oil and heat on medium heat.
- Add black mustard seeds when the oil is hot until they start to pop.
- Add cumin seeds and stir, reduce the heat to low.
- Add chopped green chillies and chopped ginger and stir.
- Add 1 tsp tumeric.
- Add 1/4 tsp garam masala.
- Add 2 tsp of cumin and corriander powder.
- Add 1/4 tsp chilli powder.
- 1 tsp of salt (add to taste).
- Add cauliflower and peas to the spices and mix through.
- Add the tomatoe paste and 1/2 cup of water.
- Cook on medium heat for 20 minutes.
- Squeeze 1/2 lemon.
- Add corriander to Garnish and then serve.
