When you are thinking how do I ensure I get my 5 day? The answer is simple make a long green/french bean curry. In Gujarati this is called Posho nu shak. These beans are humble and full of flavour, known for being rich in fibre, potassium, magnesium calcium and vitamin A,B and C. You can add potatoes to this recipe if you like but i prefer the sweet flavour of the beans with the perfect balance of spices. Serve with paratha or chapati.
Ingredients
- 400 grams Green beans
- 1 tbsp olive oil
- 1 tsp Black Mustard Seeds
- 2 cm cube Fresh ginger
- 1 tsp Salt
- 1 tsp Chilli powder
- 1 tsp Turmeric
- 1 tsp Jira and coriander powder
- 1/2 tsp Garam Masala
- 3 medium Tomatoes
- 1 handful Coriander
Instructions
- Wash and chop the green beans and tomatoes into small pieces
- Peal and thinly chop the fresh ginger
- In a pan medium heat add 1 tbsp olive oil
- Once oil is warm add 1 tsp black mustard seeds when they start popping lower the heat
- Add the Fresh Ginger Stir till ginger is slightly brown
- Add chopped green beans and stir
- Add 1 tsp salt 1 tsp chilli powder 1 tsp turmeric 1 tsp jira and coriander powder 1/2 tsp Garam masala
- Add 1/2 a cup of water and cook low heat for about 5 minutes
- Add tomatoes and stir through. Cook for a further 15 minutes till the beans slightly soft.
- Add fresh coriander mix through and serve hot.
