I joined a gym today, in celebration I thought I would make salad which is super tasty. When I talk to friends about salad I see their eyes glaze over as they start thinking about food with taste! People seem to have negative connotations to salad and I am not sure why! This is my hot cold salad recipe, healthy, filling and most of all yummy.
Ingredients
- 5 medium Asparagus
- 1/4 small Broccoli
- 1 tbsp olive oil
- 2 small Celery
- 2 medium Carrot
- 1/2 medium Green capsicum
- 1 medium Beetroot Pre cooked or you can skin it and cook it with the vegetables
- 5 medium Chestnut Mushroom
- 1 tsp Black pepper
- 1/2 tsp Salt to taste
- 1 small Red chilli
- 1/2 medium Lemon
- 1/4 medium Lettuce
- 1 handful Rocket
- 2 medium Tomatoes
- 1/4 medium Cucumber
- 1 handful Mint
- 1 medium Avocado
- 1/2 small Pomegranate
Instructions
- Cut and wash all your vegetables. Cut and take out all the pomegranate removing the yucky white bits
- In a plastic bowl add the asparagus and broccoli and fill with water and microwave for 5 minutes. Cook more if you prefer them to be soft.
- In a wok add the olive oil and turn up the heat to medium heat add chopped: celery carrots green capsicum beetroot (if it is fresh and not pre-cooked) Cook for 5 minutes
- Add mushrooms and cook for a few more minutes
- Add Salt black pepper red chilli squeeze in 1/2 a lemon turn off the heat and stir allow to cool for 5 minutes
- In a salad bowl add lettuce rocket tomatoes cucumber mint mix through
- To the salad bowl add and mix cooked vegetables
- Plate up the salad spoon avacodo asparagus broccoli garnish with pomegranate
