Ingredients

  • 2 cups cooked rice (cooled)
  • 1 tbsp butter + 1 tsp oil
  • ¼ tsp dry ginger powder or fresh grated ginger
  • 1 capsicum, diced
  • 1½ cups chopped cabbage
  • 1 cup green peas
  • 2 tomatoes, chopped
  • 2 tsp pav bhaji masala
  • 1 tsp Kashmiri red chilli powder
  • Salt to taste
  • Lemon juice and coriander

Instructions

  1. Heat oil on a large pan.

  2. Add dry ginger or fresh ginger, then capsicum, cabbage, peas and sauté till slightly soft.

  3. Add tomatoes, pav bhaji masala, chilli powder and salt; cook till tomatoes soften and masala is fragrant.

  4. Add cooked rice and mix gently so grains stay separate; sprinkle a little water if needed.

  5. Add chopped Tofu
  6. Finish with lemon juice and coriander and raisins (optional) and serve hot
