A rice and vegetable pulao its super fragrant and tasty.

Ingredients
- 2 cups cooked rice (cooled)
- 1 tbsp butter + 1 tsp oil
- ¼ tsp dry ginger powder or fresh grated ginger
- 1 capsicum, diced
- 1½ cups chopped cabbage
- 1 cup green peas
- 2 tomatoes, chopped

- 2 tsp pav bhaji masala

- 1 tsp Kashmiri red chilli powder
- Salt to taste
- Lemon juice and coriander
Instructions
Heat oil on a large pan.
Add dry ginger or fresh ginger, then capsicum, cabbage, peas and sauté till slightly soft.
Add tomatoes, pav bhaji masala, chilli powder and salt; cook till tomatoes soften and masala is fragrant.
Add cooked rice and mix gently so grains stay separate; sprinkle a little water if needed.
- Add chopped Tofu
Finish with lemon juice and coriander and raisins (optional) and serve hot
