This is a simple non nonsense burger recipe, My mother used to make these at least once a week to feed hungry mouths after she had done a 16 hour shift at work. There is something quite satisfying in building your own burger at the dining table. I tend to chop up all the salads so people can make their own burger and the table and give a prize for the most inventive. You can add a portobello mushroom to the burger or grilled sliced beetroot, there are many more options so get your thinking caps on and send me your vegetarian burger constructions there is a prize!
Ingredients
- 2 medium carrots
- 1 tin Sweet corn
- 200 grams Green peas
- 1 medium Red capsicum
- 1 tsp Salt
- 1 tsp Black pepper
- 1/2 tsp Paprika
- 100 grams dried mash potato mix
- 10 grams bread crumbs
- 2 tbsp olive oil
Instructions
- Add to a grinder Roughly cut carrots 1 tin sweetcorn 200g green peas (If they are frozen just wash in hot water) Grind till everything is mixed together and roughly cut
- Add the mixture to a bowl
- Add Chop red capsicum into small cubes (This will give it crunch) Add 1 tsp salt 1 tsp black pepper 1/2 tsp paprika
- Add dried mash potatoes mix and mix till you have a sticky dough consistency.
- Make burger shapes and dip onto bread crumbs
- Add to grease proof paper lined oven tray drizzle with olive oil
- Put in a preheated over cook gas mark 6 for 20 minutes till golden brown.
