Ingredients
- 300g good white bread, sliced thinly about 6-8 slices
- 1/4 cup (50g) dairy free spread
- 1/4 cup (50g) sugar
- 1/2 cup (80g) raisins or sultanas
- 1/4 cup (70g) chickpea (besan) flour
- 2 Tbs court flour
- 2 Cups (500ml) oat, rice or soy milk
Instructions
Crease a ceramic baking dish about 20 cm x 20 cm
Spread each slice of bread thickly with dairy free spread leaving a little spread for the top
Cut bread into triangles
Place a layer of bread slices spread side up at the bottom of the dish
Cut bread slices to fill gaps
Sprinkle sugar and 1/2 of the raisins or sultanas
Cover with another layer of bread
Sprinkle sugar and 1/2 of the raisins or sultanas
Place more bread in a uniform way
Mix chickpea flour with cornflour in a large bowl
Whisk in the milk gradually
Pur the mixture over the bread slices
Place in the fridge for a hour
Sprinkle rest of the sugar on top
Bake for 30 minutes gas mark 4 (180degree)
