I do enjoy baking and always on the good look out for quick easy recipes to make desserts. This amazing recipe is from chef Trusha! Moist and fluffy blueberry muffins. Yumbo!!!
Ingredients
- 1.5 cup flour
- 1 or 2 cups blue berries- fresh or frozen- defrosted
- 1/4 cup vegetable oil of choice not olive
- 1 cup non-dairy milk
- 2 teaspoon baking powder
- 1 teaspoon salt
- 1 cup sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 180 degrees for 10/15 minutes
- Place all dry ingredients together in a large bowl
- Mix the wet ingredients together first and then add to the dry mix
- Slowly fold in the blueberries either whole or mashed if you like that colour!
- Bake in the oven for approximately 20 minutes.
- Check to make sure they are fully cooked with a toothpick
