I was lucky enough to work with Danni who made these brownies for me on a regular basis at work. The routine was simple elevenses with a nice freshly brewed coffee and these brownies. Yummy. Warning they are addictive but hey you only live once.. Enjoy and let me know what you think!!
Ingredients
- 250 g Plain flour
- 350 g Demerara sugar
- 10 g Icing sugar
- 65 g Cocoa powder
- 20 g Chocolate chips this is optional plenty of vegan chocolate chips to choose from
- 1 tsp baking power
- 1 pinch Salt
- 250 ml Water
- 250 ml Vegetable oil
- 1 tsp Vanilla extract
- 1 handful Chopped Walnuts Optional but give it a magic twist
Instructions
- Pre-heat oven to 180C fan.
- Grease a baking tray (mines 30cm by 25cm and approx an inch deep, but use whatever you already have that's similar - doesn't have to be exact), and line with grease proof paper.
- Add all dry ingredients into a bowl and mix
- Add wet ingredients (water, then mix, then extract and mix and finally oil) and mix together until combined
- Add chocolate chips and walnuts and mix through.
- Pour into lined tray and spread mixture level.
- Bake in middle-top of the oven for 25mins or until it is no longer shiny on top, and cracks begin to appear.
- Take out and leave to cool in the tray for 10 mins, then lift out of the baking tray and leave to cool (paper still on), on a wire rack for a further 15 mins, or until cool enough to cut.
- Top with a dusting of icing sugar if you like, and cut up into pieces.
