Protein packed green lentil curry yummy wholesome and delicious any time of the day.
Ingredients
- 1 Tin Green Lentils (keep water)
- 3 fresh crushed tomatoes (Can use a tin of tomatoes)
- 1⁄2 bell pepper (cut into small cubes)
- 1 stick celery (cut into small pieces)
- 1 medium carrot (shredded) 1 cup fresh chopped spinach Coriander leaves for garnish
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp fresh green chilli paste or to taste 1 tsp ginger paste or to taste
- 1 tsp turmeric powder 1 tsp tomato puree 1 tsp garam masala
- 1 tsp jaggery (optional) 1 tsp salt
- 1 tsp cumin/coriander powder
Instructions
1. In a heavy bottomed pan add mustard seeds and roll around in pan for 1 minute on medium heat. Rub cumin seeds in palm of hands and add to pan (be careful at this point the tempering does not burn)
2. Once you can smell the cumin, add celery and bell pepper and sauté for 3 minutes.
3. Now you can add 2 tbsp of lentil water to ensure even cooking of vegetables. Then add carrots and
crushed tomatoes. Cook on low heat with lid on until it gently bubbles around the edges.
4. Add all the spices including tomato puree and cook for a further 5 minutes until the vibrant red
colour comes through.
5. Finally add the tin of green lentils including the water (brine) and simmer for a further 3 to 4
minutes.
6.Garnish with coriander and serve hot.
