So now that the festivities are over some of you will have spare sprouts in the fridge or maybe you went shopping at they were on a bargain deal. This sprouts recipe was shared by my dear friend Marina, she made this for Christmas Eve dinner and shared the recipe. The earthy taste of sprouts with the creamy flavours of pistachios and the sweet tang of pomegranate make this an any time dish. If you don’t like sprouts you will do after this recipe!
Ingredients
- 3 tbsp olive oil
- 500g Brussels sprouts, halved
- 50g pistachios, roughly chopped
- 100g pomegranate
Instructions
- Heat the oil in a large frying pan over a medium-high heat
- Put the sprouts in the pan, cut-side down, and leave them to fry for 10-15 mins, tossing occasionally until blistered
- Scatter over the pistachios and stir-fry until toasted
- Remove from the heat and stir through the pomegranate
- Season with sea salt and black pepper
- Top with some chilli flakes if you want to add some heat (optional)
Notes
Other things you can try is add some rosemary or sprinkle some sugar with the pomegranate to add a sweet twist.
