Ingredients
- 1 batch Vanilla cake (search vanilla cake on my site Monica has provide her recipe)
- 2 cups thick soy cream
- 1 cup vegan cream cheese
- 2 tablespoons icing sugar
- 1 cup double strength coffee
- 2 tbs sugar
- 2/3 cups (100) chocolate finely grated
Instructions
Get a shallow glass dish
Mix soy cream, cream cheese and icing sugar until smooth chill until needed
Brew the coffee then dissolve the sugar in it allow to cool
Lay the vanilla sponge fingers int the bace of the dish and pour the coffee mixture over them saturating it completely
Spoon the cream over the sponge and sprinkle the grated chocolate on top and Chill for 30 minutes
