This is a quick and easy gluten free recipe which is very popular in my house amongst everyone. Cassava is a nutty flavoured, starchy root vegetable. Its origins are in native to South America and introduced into Africa in the 1500’s. I have Cassava or Mogo as its called in Kenya when ever I fancy something spicy and wholesome. Cassava it’s a major source of calories and carbs for people in many countries. Nigeria, Thailand, and Indonesia are the top cassava-producing countries in the world
Ingredients
- 50g of Cassava
- 200ml Sunflower oil for frying
- 4 tbs of Tomato paste (passata is fine to use)
- 2 tbs of olive oil
- 1/2 tsp of Cumin seeds
- 3 green chillies chopped
- 1/2 tsp of chilli powder
- 1/2 tsp of cumin powder
- 1/4 tsp of Turmeric
- 1/2 tsp of Salt
- Hand full of fresh coriander chopped
Instructions
- Chop Cassava into pieces and fry off like chips till crispy
- Put to one side on a paper towel to absorb excess oil
- Add a 2 tbs of olive oil in a pan and heat up on medium heat
- Add 1/2 cumin seeds and stir till aromas are released
- Add chopped chillies and stir (reduce the heat)
- Add 4 tbs tomato paste
- Add 1/2 tsp chilli powder
- Add 1/2 cumin powder
- Add 1/4 turmeric
- Add 1/2 tsp Salt
- Add fried Cassava and stir through till all the sauce sticks to the chips
- Add chopped coriander stir and serve.
Notes
If your sauce gets too dry just add 1 tbs of water
