Fafda got famous by a festival named Dusherra. Traditionally, fafda and jalebi are the most sought-after sweet and salt combination in Gujarati cuisine.
Ingredients
- 1⁄2 cup besan (gram flour)
- 2 tbsp urad flour (De-hulled Matpe lentil flour)
- 1⁄8 tsp salt
- 1⁄8 tsp baking soda
- 1⁄8 tsp carom seeds
- 1⁄8 tsp crushed black peppercorns
- 3 tbsp boiling water
- 2 tbsp rice flour for rolling
Instructions
- Pre-heat the oven to 180 degrees Celsius
- Line a baking tray with a non-stick baking sheet
- In a mixing bowl add all the dry ingredients and mix with a spoon
- Add the boiling water and incorporate it into the flour by mixing with a spoon to avoid burning hands
- Once the mixture feels cool to touch, prepare the dough using hands
- Divide the dough into two smooth equal balls and cover with kitchen towel to prevent drying
- Flatten one ball between the palms, dip it in the rice flour, place it on a rolling surface and roll it into a
- Make cuts on the disc with a knife to get thin strips
- Place the strips on the lined baking tray and bake at 180 degrees Celsius for 8 minutes
- Leave to cool.
