Khandvi is a popular snack from Gujarat and is a tasty delicate treat. Daxita Vaghela a family member gave me this recipe. Daxita is the famous lash queen to the celebrities and a brilliant cook! Khandvi has a soft, silky texture that just melts in your mouth. It does take practice to make it perfect but once you crack the code you will join the I can make Khandvi club!
Ingredients
- Khandvi
- One cup besan flour
- Two cups lassi (Sour yogurt with water)
- Salt and red chilli powder to taste and pinch of turmeric powder
- For tadka
- 1 tsp mustard seeds
- 1 tsp jeera
- 1 tsp sesame seeds
- Few curry leaves
- Dedicated coconut
- Tsp finely cut green chilli
- Some fresh coriander for garnish
Instructions
- Make a pan mix besan flour lassi salt red chilli powder and turmeric powder mix well until all the lumps disappears.
- Put the pan on medium flame keep stirring until it starts to leave sides it normally takes between 5-10 mins.
- Once it is ready spread on work top quick as you can spread thin as possible as when it cools you can't spread it.
- Cut lines length ways equal distance apart and roll them put them in a dish.
- For the tadka take 3 tbsp oil in a pan once it is very hot add curry leaves mustard seeds jeera sesame seeds let them splutter
- Pour the oil on top of Khandvi make sure you cover all the Khandvi sprinkle some desiccated coconut finely chopped chilli and fresh coriander.
